Mint Liquor

2 cups any fresh mint leaves, apple mint or chocolate mint are my favorites.
Zest of on lemon
1/2 Vanilla bean
3 cups vodka
1 1/2 cup sugar
1 cup water
1 teaspoon glycerin
8 drops green food color (optional)
2 drops blue food color (optional)

Use mint leaves only, stems removed.
Measure 2 cups of snipped leaves and put with the vodka in a large glass jar with a non-metallic lid. Let sit for two weeks, shaking occasionally.
Strain and discard leaves.

Combine sugar and water and bring to a boil, then cool.
Add to mint liquor base, add glycerin and food color and stir to mix.
Pour into a sterilized jar and leave for at least 6 weeks to mature.
